Cooking with Pam Eastman

Pam Eastman is currently the resident baker at L’Italia Restaurant creating many of their signature desserts. Before that she was the owner/chef at the Paradise Café in Hornell, NY. Pam continues to teach a wide variety of cooking skills to groups and individuals including cooking for health and healing.

“I believe that cooking and baking are best approached with humor and fearlessness, to let your best and most creative self come forward. It’s about relaxing and having fun. Let’s laugh and create beautiful desserts together!”

Introduction to Mediterranean Cooking!

This class reflects cooking styles and ingredients from a large and varied region. We will learn to make: tabouleh (a traditional grain salad), falafel, succulent chick-pea croquettes, hummus, cephalonian salad and of course spanakopita (spinach pie). A dessert of honey pudding finishes this foray into Mediterranean cuisine. Come prepared to have fun, learn lots, satisfy your hunger and take home leftovers.

Introduction to Cake Decorating

Back by popular demand!!!! Starting with your own cake (provided by Pam), you will learn how to make your very own classic bread butter cream frosting. You will also lean various decorating techniques using multiple tips and colorings. What better way to be rewarded then with your handmade artistically decorated cake to take home? These easy to master techniques will allow you to turn an average cake into something really special for any type of event.

Advanced Cake Decorating

In this class participants will be provided with 2 cakes and will learn advanced decorating techniques such as roses and other complex flowers. You will also learn the basics of tiered cake construction. Pam will teach you how to make royal frosting to create beautiful flowers, scroll work and basics in using gum paste for decorating.
